We've had a successful food cart for the last 4 years (www.gaufregourmet.com), and when an opportunity to expand to a brick and mortar presented itself we took it!
The Gaufre Gourmet started as a food cart in 2010. We’ve had quite the ride in the last 4 years and now we are moving on up! We found the perfect location for our brick and mortar restaurant that will bring waffles and more to the Hillsdale community in Portland, OR. This move was somewhat sudden for us. Although we have been planning and on the lookout for a location to expand to, we didn’t expect for it to all come together so soon!
We are bringing back the old fashioned soda fountain, complete with farm fresh ingredients and house made syrups, where we feature brunch, hand crafted sodas, great micro-roasted coffee, and of course waffles!
The liège style waffle is made from a sweet brioche-style dough (not a batter) with big chunks of pearl sugar that are kneaded into the dough immediately before baking. The yeasted dough gives these waffles a dense and chewy texture, while the sugar gives them a sweet flavor and a carmelized coating.

While liège style waffles are delicious on their own, The Gaufre Gourmet continues to take their waffles to the next level by using fresh, local, organic ingredients to make their toppings entirely from scratch. Customers faint over their sweet and savory options, fully appreciating Charlene and Michael’s commitment to offering the best of the Northwest’s bounty of seasonal offerings.

Effective March 1, 2017, GiGi’s is tipless! We have chosen to become a tipless restaurant to ensure all staff, both front of house and kitchen staff, are paid a living wage, covered by health and dental insurance and a part of our profit incentive plan. A 20% surcharge will be added to each ticket (in lieu of gratuity), and used entirely for staff benefit. With increasing minimum wage law in Oregon, this was our best solution to combat wage disparity within the restaurant staff without changing what customers would regularly spend.
